The James Royal Palm on SoBe just got a $45-million facelift and they celebrated last night with the official opening of their authentic Florida restaurant - Florida Cookery.
The brand new "Florida Cookery" at the James Royal Palm on SoBe stands for old-florida-inspired cuisine.
Prepared by the food network's "chopped" champ, Chef Kris Wessel and where there's a winner or a grand opening there's Belkys Nerey look at her , so cute.
PATRICK HATTON: "Tonight at the James Royal Palm, we're launching Florida Cookery to the public. We're thrilled to be working with Kris Wessel - a local chef - bringing Florida back to the beach."
PATRICK HATTON: "From a culinary perspective Kris has been able to bring the authentic flavors of old Florida back and recreate them in beautiful new dishes."
From authentic conch chowder and guava jelly pork belly grit cakes to grandma Esther's key lime pie it's Florida flava.
CHEF KRIS WESSEL: "I would say three words - tropical, citrus, exotic are the flavors and the taste of of Florida Cookery."
And not just old Florida all of Florida.
CHEF KRIS WESSEL: "We're paying respect to all of the cultures of South Florida."
CHEF KRIS WESSEL: South American influences, the caribbean influences and even the contempory influences of New York city and the American South."
Yup! This is sizzling gator tail it's been ground and mixed with tomatoes, cilantro and parmesan cooked in shrimp stock and baked into an empanada.
And this is wild boat add oil and grilled with sapadilla fruit glaze.
Delicious down home baked beans, but who's really gonna eat wild boar?
CHEF KRIS WESSEL: "You'd be surpised who'd eat wild boar - I know my good buddy Louis Aguirre would eat a wild boar only this time he doesn't have to go to the back of a motel - he can go to the hotel at the james."
Looks like Louis' not the only fan of Florida cookery.
