Deco Features: Lorena Garcia
We saw foodies chefs and reporters all rubbing elbows and forks at the South Beach Wine and Food Festival, but the events aren't just on the beach. They're all over so-flo and even though it's called the Wine and Food Festival -- some stuff is meant for the under 21 set.
LORENA GARCIA: "It's a perfect opportunity for all the foodies there are out there to come and join an array of fantastic chefs, the best in the country they all get together and they have different functions."
Sure we know about the events on the beach -- with the free flowing booze, but this weekend -- your kids can have two days of fun at the "kellog's kids kitchen." and when you leave -- you won't need to pour sand out of your shoes.
LORENA GARCIA: "I'm doing the fun and fit as a family at Jungle Island. It's going to be over a thousand kids."
Lorena Garcia is a Latin food maven.
LORENA GARCIA: "I have three words fresh, Latin, modern. I think that I would describe it like a soul food Latin cuisine"
And on sunday this TV chef will be whipping up a dish to remember.
LORENA GARCIA: "I'm going to be making my chicken meatballs with a Latin twist."
The event is family friendly -- the food is kid and Deco approved.
LORENA GARCIA: "I love to make recipes that the kids are involved in it. It doesn't have to be that the kids are making the entire recipe. Just give them one task that is fun."
Lorena combines ground chicken with herbs, spices and bread-crumbs and get this yogurt,
LORENA GARCIA: "As binding ingredient I use a low fat Greek yogurt - it makes a harmonious form for the meatballs."
Mix everything up let it chill out in the fridge then scoop some balls.
LORENA GARCIA: "Ice cream scoop these are my best friends in the kitchen."
Sear off the meatballs -- then it's time to get saucy.
LORENA GARCIA: "Capers, garlic and shallots boom. Sofrito about three tablespoons of sofrito."
Deco dictionary time sofrito is a staple in Spanish, Caribbean and Latin cooking and can be added to almost anything.
Add the meatballs, lemon juice and chicken stock. Let it simmer and serve it up. Too bad Deco doesn't have taste 'ovision. Guess that means you're going to have to buy tickets to the kellogg kids kitchen event at Jungle Island.
