All this month, Belkys learns our viewers' favorite recipes. This week, Hot And Spicy Jamaican Curried Chicken.
The Viewer: Sharon King
The Dish: Hot And Spicy Jamaican Curried Chicken. A Family Favorite.
"Who taught you how to make it?"
Sharon says, "My Grandma."
Do you remember her teaching you?"
Sharon adds, "I was probably around 7 and she used to let us sit with her in the kitchen while she was doing this"
Directions:
Sharon starts the dish by washing 2 pounds of cut chicken -- preferably legs and thighs.
Once that's done she drains the water
Then goes to town on the seasoning by slicing 2 onions.
Sharon says, "You can slice it dice it whatever you choose to but I like it chunky..."
Sharon likes her onions chunky but mashes her garlic cuz she likes it crushed.
Then she slices 2 scallions
And adds everything to the bowl with the chicken. .
"Now what we're gonna do is we're gonna add the seasonings..."
Sharon starts by adding 1/2 a teaspoon of ground scotch bonnet pepper.
1 tablespoon of chicken seasoning
A tablespoon of all purpose seasoning
1 teaspoon of Jerk seasoning -- and
"The essence of the dish is the curry powder.."
Add 3 tablespoons of Jamaican curry powder and mix everything making sure the chicken is well coated.
Then add it to a hot pan covered in vegetable oil..
Sharon says, ""Cover it and let it simmer on medium high for about 15 to 20 minutes...ok..."
Mix the chicken periodically so it doesn't stick to the bottom of your pan.
Then add sliced red and green peppers and diced carrots to the pan
One can of chicken broth
Stir and cover it again for another 15 or 20 minutes
"I have to explain to the viewers what's going on here...it's Sharon's recipe but her friend Monica said you can use my kitchen but only if you make an extra pot of the stuff for my house...so there's 2 pots of Jamaican Curried Chicken going at once..."
When the sauce thickens up
Serve it over Jasmine rice
"Mmmm....that is good stuff..."
The best part is sharing with friends --- old and new...
