Bite with Belkys: Opa Greek Salad

So you say you're not much for salads? Well you will be -- once you go Greek with a delicious, low-calorie creation.

The Dish: Horiatiki A.K.A. Greek Salad

Ingrediets For Salad:

2 tomates, cut in wedges

1 cumumber, peeled and sliced

1/2 green pepper, cut into thin pieces

1/4 orange, yellow or red pepper

1/2 red onion

1/4 white onion

1/4 lb Feta cheese

1/2 sprig of thyme

1/4 sprig of rosemary

1/2 tsp zest of lemon

1/2 tsp zest of orange

2 tsp salt

1 pinch of pepper

1 pinch of dried oregano

3/4 tsp garlic chopped

Green and black olives to garnish

 

Ingrediets For Dressing:

1/4 cup olive oil

3 tablespoons red wine vinegar

3 tablespoons champagne vinegar

 

Method

Zest lemon and orange and set aside. Cut vegetables and place in bowl. Add zests, herbs, salt, pepper and garlic to the bowl. Add liquid ingredients and mix throughly by hand. Add Feta cheese on top, then a pinch of oregano and a pinch of black pepper. Add olives for garnish.
