Bite with Belkys: Chicken Mole From Tequila Ranch Restaurant
Our search for delicious dishes around the world continues. Tonight's entree coming to us from "south of the border." it's a traditional Mexican chicken dish -- with a twist. The secret is in the sauce. Time to grab "A Bite With Belkys."

The Dish: Chicken Mole
- 6 cups lard
- 2 1/2 cups chopped almonds
- 2 1/2 cups chopped pine nuts
- 2 1/2 sesame seeds
- 1 banana
- 2 onions
- 15 cloves chopped garlic
- 1 1/2 gallons chicken broth
- 2 cups pitted prunes
- 2 cups raisins
- 30 ancho chiles (available at any Latin supermarket)
- 5 huajillo chiles (available at any Latin supermarket)
- You can use chile paste
- 6 tortillas
- 12 oz. dark chocolate (for cooking)
- 3 tsp. cinnamon
- 3 tsp. anise
- 3 tsp. cumin
-Toast sesame seeds in a dry pan.
-Toast pine nuts and almonds with lard. (you can substitute lard with vegetable oil)
-Add the toasted pine nuts, almonds, sesame seeds, toasted tortillas and hot chicken broth to a blender.
-Mix it until it's creamy and set it aside.
-Add the prunes and raisins to a hot pot and let it boil, and on another pot with boiling water, add the toasted chiles. (you can substitute chiles with chile paste available at any supermarket)
-On another pan coated with vegetable oil, add some chopped onions and minced garlic and sauté for a few seconds.
-Add the softened chiles, prunes, raisins, onions and garlic, banana and chicken broth to another blender and mix it until creamy.
-On a pot, melt some dark chocolate and add the two mixes. Stir until creamy. For extra flavoring, add some cinnamon, anise and cumin and continue stirring.
-Once it's ready, set it aside.

-Season the chicken with salt and pepper on both sides.
-Place it on the pan with vegetable oil skin side down and sauté for three minutes on each side.
-Flip it and let it cook until it's tender and moist on both sides.
-Ladle about 1/2-3/4 cup of the mole over the chicken.
-Garnish the dish with toasted sesame seeds, chile and dark chocolate shavings.
***Freeze the remainding mole for future use***
