Bite with Belkys: Mediterranean Mussels from Perricone's Cafe

An awesome appetizer bound to hold you over until dinnertime tonight. We're cooking up some special seafood. It's an Italian favorite sure to wet your appetite. Time to grab a bite of some "marvelous mussels" with Belkys.

The Dish: Mediterranean Mussels
Ingredients:
- 2 lbs. fresh live mussels, scrubbed
- 2 tbsp olive oil
- 2 tbsp olive oil
- 2 tbsp minced garlic
- 1 cup diced tomato
- 1/4 cup chopped fresh basil
- 1/4 cup chopped fresh parsley
- 1/4 cup white wine
- 1 tbsp freshly squeezed lemon juice
- Salt
- Crushed red pepper flakes
- Chopped fresh herbs for garnish
Directions:
-Wash and clean mussels under water.
-Chop tomatoes, basil and parsley.
-Heat olive oil in a sauté pan to medium high, add garlic and mussels.
-Allow to cook for several minutes until mussels begin to open.
-Add tomatoes, basil and parsley to the pan and stir.
-De-glaze pan with white wine.
-Add lemon juice and season with salt and red pepper flakes to taste. If you don't like spicy food, you can eliminate the red peppers.
-Serve steaming hot with fresh bread on the side.
-Portion serves four.
