Bite with Belkys: Picante De Camarones With A Roasted Pepper Salad Garnish

The Dish: Picante De Camarones With A Roasted Pepper Salad Garnish
12 Large shrimp
2 tbs Fine Diced Ginger
2 tbs Fine Diced Garlic
3 tbs Aji Panca Paste
1 tbs Minced Aji Rocoto
2 tea Annatto Powder
╝ cup White Wine
2 tbs Diced Tomato Concasse
2 tbs Canola Oil
1 tea Cumin Powder
To Taste Salt and Pepper
Season shrimp with salt and pepper to taste.
Heat large skillet over high heat, when hot add oil and seasoned shrimp.
Sear shrimp on one side for approximately two minutes.
Add ginger, garlic, aji panca, aji rocoto, annatto powder and sautÚ for approximately three minutes.
Deglaze pan with white wine and add tomato.
Cook until reduced by fifty percent.
Season to taste with cumin powder, salt and pepper.
Serve over steamed white rice, or for a healthier twist, serve over steamed brown rice.
