Bite with Belkys: Fit for Life Chicken Penne Pasta

If you're cutting out the carbs, you probably avoid pasta like it's the plague. But, we all have cravings once in a while. Tonight, a quick and easy penne pasta dish -- that will please your pallate, without breaking your diet. It's time to grab A Bite With Belkys.

The Dish: Fit for Life Chicken Penne Pasta

-19 net carbs, 42 grams protein, 11 grams fiber

 

Ingredients:

-1 medium red pepper, diced

-1/4 cup fat-free sun-dried tomatoes

-1/2 large red onion, diced

-1 regular tomato, diced

-3 cloves garlic

-1 whole skinless & boneless chicken breast, cut into strips

-3 strips of 99% fat free turkey bacon

-1/2 cup low carb penne pasta

-1 teaspoon basil

-lite salt to taste

-black pepper to taste

-1 tablespoon fat free parmesan cheese

-no-salt herb seasoning to taste

 

Directions:

-Boil the pasta according to box directions. In a hot saute pan, add fat free margarine, red pepper, sun-dried tomatoes, red onion, tomato, garlic and turkey bacon. Then season this with basil, black pepper, fat free parmesan cheese, a blend of no-salt herbs, lite salt. Finally add the chicken and the pasta.

-To plate the dish put the pasta on a plate, then sprinkle with shredded carrots and more parmesan cheese.

Serves 1-2
