Bite with Belkys: Roasted Corn Tamale Cakes

The Dish: Roasted Corn Tamale Cakes

This dish will be served at the MTV Video Music Awards show on Sunday, August 29th at the American Airlines Arena.

 

Ingredients:

-1-ear Fresh corn kernels roasted

-1 cup Heavy Cream

-½ cup Corn Meal

-½ cup Matzo meal

-3 Tbls Flour

-1 tsp Baking Powder

-Pinch Cayenne Pepper

-Salt & Pepper

-¼ of medium Red Pepper diced

-¼ of medium Green Peppers Diced

-½ Minced Habanaro pepper

-Diced Onion

-1 Tbls Chopped Cilantro

-2 Tbls Diced mangos

-1 tsp Honey

-1 tbls Olive oil

Cut corn from the cob and roast in a 400-degree oven until golden brown.

Combine all dry ingredients in a large mixing bowl. In a hot skillet sauté diced onion, habanaros and half of the red and green peppers. The rest of the peppers along with the mangos and cilantro will be used as a garnish at the end.

When the onions turn clear place the mixture and the roasted corn in the bowl with dry ingredients. Add the honey and heavy cream and stir.

The consistency should be like very thick pancake batter. In a hot cast-iron skillet add a little oil and place approximately 1-2 ounces of mixture in the pan.

When you see the edges of the cake turn slightly brown flip them over with a spatula. Total cooking time should be around 2-4 minutes.

Try not to over cook the cakes, if they are a little soft in the middle the better.

Place on a plate and top with the remaining peppers, mango, avocado crème and chipolti cream sauces.

 

Avocado Crème Sauce

Ingredients:

-1 Avocado

-1 cup Sour Cream

-1 tsp Cilantro - chopped

-1 tsp Lime Juice

-1 Lime Zested

-Pinch of Kosher Salt

Place the avocados and lime juice in a blender and puree in a mixing bowl combine the remaining ingredients and whisk thoroughly Refrigerate immediately

 

Chipolti Cream Sauce

Ingredients:

-1 each Canned Chipolti peppers

-½ cup Heavy Cream

-½ cup Sour Cream

-1 tsp Cilantro - chopped

-1 tsp Lime Juice

-1 tsp Lime Zest

-Kosher Salt

Place one Chipolti pepper in a food processor with limejuice and puree. Pour Heavy Cream into a mixing bowl and whisk lightly until it thickens slightly.

Add the remaining ingredients to the mixing bowl including the pureed Chipolti peppers and fold together with a rubber spatula.

Refrigerate immediately.
