Bite with Belkys: Almond Milk Pannacotta

The Dish: Almond Milk Pannacotta
- 1 Qt Almond Milk
- 1 tbsp almond extract
- 1 Qt Heavy Cream
- 1 1/2 cup sugar
- 1 cinnamon stick
- 1 lemon peel
- 9 Gelatin sheets
- Pour heavy cream, almond milk, sugar, cinnamon stick and lemon peel into a large saucepan and bring this to a boil.
- Soften gelatin sheets in water, then pour into cream mixture.
- Fill ramekins and refrigerate until cream becomes firm.
- Top with blood orange puree (one blood orange pureed and sugar to taste), fresh fruits and a sprig of mint.
