The Dish: Almond Milk Pannacotta

Ingredients:

  • 1 Qt Almond Milk
  • 1 tbsp almond extract
  • 1 Qt Heavy Cream
  • 1 1/2 cup sugar
  • 1 cinnamon stick
  • 1 lemon peel
  • 9 Gelatin sheets

Directions:

  • Pour heavy cream, almond milk, sugar, cinnamon stick and lemon peel into a large saucepan and bring this to a boil.
  • Soften gelatin sheets in water, then pour into cream mixture.
  • Fill ramekins and refrigerate until cream becomes firm.
  • Top with blood orange puree (one blood orange pureed and sugar to taste), fresh fruits and a sprig of mint.
