Bite with Belkys: Vegan Tofu Pumpkin Pie From Freshly Organic Eatery

It's hard to watch your waistline during the holidays, especially with all the sweets. So tonight, we're cooking up a perfectly healthy pumpkin pie. Time to grab "A Bite With Belkys."

The Restaurant: Freshly Organic

The Dish: Vegan Tofu Pumpkin Pie

Ingredients:

  • 1 box extra firm tofu
  • 1 can of pumpkin
  • 1 teaspoon ginger powder
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon molasses
  • 1/2 cup canola oil
  • 1/2 sugar

Preparations:

-Mix all of the ingredients in a food processor. 
-Add mix to wheat crust and bake for for 35 minutes at 400 degrees.   
-Refrigerate before serving.
-Add nuts for decoration.
