Bite with Belkys: Honey Baked Ham & Cheese Quiche

If you're still eating Christmas ham for leftovers, you're going to like tonight's recipe. Forget the sandwiches, we're showing you how to whip up a tasty treat for breakfast or brunch. Time to grab "A Bite With Belkys."

The Dish: HoneyBaked Ham & Cheese Quiche

Ingredients:

  •  1 1/2 cups diced HoneyBaked ham
  • 1/2 lb. bacon, crisp cooked and diced
  • 1 cup shredded cheddar cheese
  •  1 cup shredded colby jack cheese
  • 1 small onion, chopped
  • 1 jar (2 1/2 oz.) sliced mushrooms
  •  2 cups milk
  • 4 eggs, beaten
  • 1/2 cup biscuit baking mix
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

 

Preparations:

-Preheat oven to 400 degrees.
-In a greased nine-inch pie pan, layer ham, bacon, cheeses onion and mushrooms.
-In a medium bowl, combine milk, eggs, biscuit mix, salt and pepper and beat this well. Pour the milk mixture over ham and cheese starting from the outside, working your way in.
-Bake at 400 degrees for ten minutes. Reduce 350 degrees and cook for another 40 to 50 minutes.
