Bite with Belkys: Red Snapper Served With Stir Fry Vegetables From Doraku

If you want to add a little bit of flare to your fish, you'll love this recipe. It's a seafood and vegetable dish with a Japanese twist. Time to grab a bite with Belkys.

The Dish: Red snapper served with stir fry vegetables

Red Snapper Filet
Ingredients:
- 6 oz. red snapper filet
- 1/2 cup white onion
- 1/8 cup yellow pepper
- 1/8 cup red pepper
- 1/8 cup green pepper
- 1/8 cup Shiitake mushrooms
- 1/8 cup regular mushrooms
- 1/4 cup tofu, diced
- 1/4 cup flour
- 1 pinch oyster sauce
- 1 tsp. soy sauce
- Sprouts for garnish
- Sesame seeds for garnish
- Salt and pepper to taste
- 1 teaspoon of black miso per filet (can buy at any Asian market)
Directions:
-Begin by chopping onions, yellow peppers, red pepper, green pepper, Shiitake mushroom, regular mushroom and set everything to the side.
-Trim sprouts you'll use to garnish with and set them to the side.
-Now move onto the fish. Add salt and pepper to the filet or filets then dip the fish in flour and cover both sides.
-In a hot sauté pan, add some oil, and sauté the fish on both sides for a couple of minutes on each side.
-Top each filet with a spoonful of the sweet miso sauce (recipe below or store bought version) and place the sauté pan in a 350 degree oven for another five minutes or until fish is done.
-In the meantime, stir fry white onions, all of the peppers and the mushrooms until the onions are tender. Then add tofu and sauté for a couple more minutes.
-Plate the dish, starting with the vegetables, add sesame seeds, put fish on top, add a teaspoon of black miso (which you can buy at the supermarket) if you like, and garnish with sprouts.
Sweet Miso Sauce
Ingredients:
- 1/4 cup red Miso
- 1/8 cup sugar
- 1/2 cup sweet sake
Directions:
-Mix all the ingredients in a bowl.
