Bite with Belkys: Cream of Chestnut Soup from Pascals
If a bowl of soup sounds tempting, forget finding a can in the pantry. Tonight, we found something special and it's delicious. Time to grab a bite with Belkys.

The Dish: Cream of Chestnut Soup
- 1¼ pounds unpeeled chestnuts (reserve 10 chestnuts for garnish)
- 3 cups chicken stock
- 1 oz. foie gras (optional)
- 1/2 cup prochiutto, chopped (save one ounce for garnish)
- 2 Tbsp. olive oil
- 1½ cups heavy cream
- ¼ cup shallots
- Freshly ground black pepper and salt to taste
- Apple chutney for garnish
- 1 tablespoon creme fraiche or sour cream
-Bring water to a rapid boil in a large pot. Add the chestnuts and blanch for five minutes. -Immediately drain and cool in iced water and repeat. Slice off the bottom of each shell with a sharp knife and peel off remaining shell. Heat a medium saucepan over high heat for about two minutes.
-Add olive oil, chestnuts, prochiutto and shallots to the saucepan and season generously with pepper.
-Cook and stir for one minute.
-Add the chicken stock and foie gras (optional) bring to a boil.
-Reduce heat and let it simmer for 30 minutes, stirring and skimming occasionally. Puree mixture in a food processor and strain through a fine mesh strainer.
-Return strained pureé to a heavy two-quart sauce pan, stir in the heavy cream and taste for seasoning. Bring to a boil, stirring occasionally.
-Remove the soup from heat and keep warm.
-To finish, oven roast the reserved chestnuts for ten to fifteen minutes at 350° until tender.
-Peel and cut the chestnuts in half and place in a small nonstick skillet; cook over high heat for 6-8 minutes or until well browned and set aside.
-Reheat the soup if needed and place the roasted chestnuts and soup in a heated tureen.
-To plate the dish, ladle the soup into a bowl, and garnish with a teaspoon of apple chutney, a chestnut, a teaspoon of prochiutto and some creme fraiche or sour cream.
-Portion serves 6.
