Bite with Belkys: Porcini Wonton Soup En Brodo Served With Mushroom Salad from Azul Restaurant

It may be February, but in the Far East, it's the Chinese New Year. And in the sprit of the holiday, a local restaurant revealing the recipe for a wonderful wonton soup. Time to grab a bite with Belkys.

The Dish: Porcini Wonton Soup en Brodo Served With Mushroom Salad
Ingredients:
Wontons:
- 8 ounces of chicken
- 1 egg white
- 3 ounces of porcini mushrooms
- 1 tablespoon soy sauce
- 1 teaspoon chopped garlic
- 1 teaspoon chopped ginger
- 3 ounces of heavy cream
- Salt and pepper
- 24 wonton skins
- Egg wash (egg yolk and milk)
- 1 can mushroom broth
Directions:
-In a food processor, combine all ingredients except the heavy cream. Process all the ingredients until smooth.
-While machine is running, drizzle in heavy cream and then stop machine immediately.
-Put teaspoon of filling in wonton skins.
-Wash with egg wash and fold.
-Put wontons in boiling water for about 5 minutes and shock in ice water.
-Remove from water and put on bowl.
-Add mushroom broth to the wontons.
Ingredients:
Mushroom Salad and Vinaigrette:
- ½ cup mushrooms
- 1 teaspoon ginger
- 1 teaspoon garlic
- 1 teaspoon shallots
- Squeezed lime juice
- Salt and pepper to taste
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon olive oil
- fresh cilantro
Directions:
-In a bowl, mix all of the ingredients and then whisk for a couple of minutes.
-Garnish with cilantro and continue whisking sauce.
-Add mushrooms and mix them with the sauce.
-Place the salad next to the wonton soup.
-Portion serves one.
