Bite with Belkys: Herbed Garlic Chicken in a Bag
Our month long series of cooking with young chef's continues tonight. This time, the helping hands are showing us how to make one of their all time specialties. Time to grab a Bite with Belkys.
The Chefs: Johnny & Zak Vinczencz from Johnny V in Fort Lauderdale
The Dish: Herbed Garlic Chicken in a Bag
1 whole chicken
25 basil leaves
1 Tbs. of salt
1 Tbs. of ground black pepper
1 oz. of roasted garlic
4 oz. of vegetable oil
8 fresh sage leaves
Method of Preparation:
-Start by preparing a marinade. In a blender, add basil, salt, pepper, roasted garlic, vegetable oil and fresh sage. Blend all the ingredients until smooth.
-Next, season the chicken with salt and pepper, place it over Saran Wrap and pour the marinade over the top.
-Now, wrap the chicken with the Saran Wrap and then wrap again with tin foil. Chef Johnny says the tin foil will keep the Saran Wrap from melting.
-Cook the chicken in a 350 degree oven for 45 minutes. Then let it cool to room temperature and remove the bones.
-In a hot pan with vegetable oil, sear the the chicken for a few minutes, flip it over and finish it in the oven.
To Plate the Dish:
Chef Johnny and Zak recommend serving this dish with a side of mashed potatoes and mixed veggies.
