Bite with Belkys: Baked Apples with Sweet Potato Stuffing

Our month long series of cooking with young chef's ending just in time for Thanksgiving. We're stopping by a kids cooking school to learn how to make a sweet treat. Time to grab a bite with Belkys.

The Dish: Baked Apples with Sweet Potato Stuffing

Ingredients:
1/2 cup of cinnamon red hot candies
6 baking apples, peeled and cored
2 medium sweet potatoes
1/2 cup of canned, crushed pineapple (drained)
1/3 cup of brown sugar
1/4 cup of chopped walnuts
6 large marshmallows

Method of Preparation:

-Start by combining the cinnamon candies with one cup of water in a pot, over medium heat. Stir the candies until they dissolve.

-Then, coring and peeling the apples, cut the bottom, so they can stand upright. Place the apples in a microwave-safe baking dish and pour the candy sauce over the top.

-Next, cover the apples with plastic wrap and heat them for 3 1/2 to 4 minutes in the microwave.

-Now, pierce sweet potatoes with a fork and microwave them on high for 8-10 minutes, until tender. Once they cool, peel off the skin.

-In a large bowl, mash the sweet potatoes with crushed pineapple, brown sugar and walnuts. Then, use this mix to stuff the apples.

-Then, bake the apples in a 350 degree oven for 20 minutes.

-Lastly, carefully add marshmallows, sprinkle some walnuts over the top and bake again for one to two minutes.


Serving Suggestion: Fruit Punch
