Bite with Belkys: Cheese Fundido From the Flagship

Deciding what dish to make for a small get-together is not always easy. Tonight, we're showing you a simple solution. Time to grab a Bite with Belkys.

The Chef: John Nicely
The Restaurant: Miami Heat's Flagship in the American Airlines Arena
The Dish: Cheese Fundido

Ingredients:

4 oz. chorizo
6 oz. of Monterey jack cheese
1 oz. of queso fresco
1 oz. of goat cheese
1 cup of heavy whipping cream
4 oz. of tortilla chips
1 gal. of canola oil

Method of Preparation:

-Start by cooking a chorizo in a 350 degree oven for 15 to 20 minutes. Then remove the skin and give it a rough chop.

-Place the chorizo in a baking dish, and add Monterey jack cheese, queso fresco and goat cheese.

-Next, season the mix with salt and pepper. Pour in heavy whipping cream, and let it bake for about 10 to 15 minutes in a 350 degree oven.

-Now, Chef John likes to make some tortilla chips. Deep fry the chips in canola oil until crispy. Then season with a little salt.

To Plate the Dish:

Place the tortilla chips on the side of the cheese fundido. You can garnish with a mix of fried peppers and cilantro.
