Bite with Belkys: Chicken Gyro

Sick of eating the same old sandwich all the time? Tonight, we're making one with a twist. Time to grab a Bite with Belkys.

Ingredients for Tzatziki Sauce:

1 cucumber, peeled and grated
1 cup of Greek yogurt
1 Tbs. of fresh dill
salt and pepper, to taste
1 tsp. of garlic, minced
2 Tbs. of olive oil

Method of Preparation:

-First, clean and peel your cucumber. Chef Christina likes to leave some of the skin for texture.

-Then, grate the cucumber into small pieces and squeeze out all of the juices.

-In a large bowl, add the grated cucumber, Greek yogurt, fresh dill, salt, pepper, minced garlic, olive oil and stir it all together.

Ingredients for Chicken Gyro Sandwich:

1 chicken breast
salt and pepper, to taste
1 tsp. of oregano
1 tsp. of garlic, minced
juice of 1 lemon
3 Tbs. of olive oil
1 pita bread
1/2 cup of lettuce, shredded
4-5 onion slices
1/2 tomato, sliced
2 Tbs. of Tzatziki sauce
paprika, one pinch

Method of Preparation:

-Start by cutting the chicken into thin strips. Then season with salt, pepper, oregano, fresh garlic, lemon juice and olive oil. Cover the chicken and let it marinade in the fridge for at least eight hours.

-Next, drizzle some olive oil on your grill to heat up the pita bread and cook the chicken at the same time. You can also use a sauté pan.

-Now, place the pita over a piece of parchment paper and add the chicken strips, shredded lettuce, Tzatziki sauce, onion, tomato, paprika, salt and pepper and wrap it up. Chef Christina likes to hold it in place with a tooth pick on the side.

To Plate the Dish:

At the restaurant, they top the chicken gyro sandwich with a little more Tzatziki sauce and a sprinkle of paprika.
