Bite with Belkys: Pacific Roasted Halibut

A chef at a new hot spot in Fort Lauderdale is helping you keep that resolution to eat healthy. He's sharing his recipe that's a big hit with seafood lovers. Time to grab a Bite with Belkys.

The Dish: Pacific Roasted Halibut
Ingredients for potatoes and kale:
3 oz. of extra virgin olive oil
2 garlic cloves, sliced
3 oz. of fingerling potatoes (blanched and roasted with salt, pepper, rosemary and sage)
kosher salt, to taste
black pepper, to taste
3 oz. of kale, blanched
Method of Preparation:
-Begin by pouring a little olive oil on a hot pan. Then add garlic and the blanched fingerling potatoes.
-Season with kosher salt and black pepper.
-Finish the potatoes in a 350 degree oven for eight to 10 minutes.
-Next, in a separate pan, saute some more garlic in a drizzle of olive oil.
-Toss in blanched kale and sprinkle it with a pinch of salt.
Ingredients for Halibut & Langostino:
6 oz. halibut fillet
kosher salt, to taste
black pepper, to taste
1 tsp. of Cajun spice
1/2 bunch of fresh parsley, chopped
1 Tbs. of flour
3 scampi-langostino (or jumbo shrimp)
Method of Preparation:
-Start by seasoning the fish with salt, pepper, Cajun spice, parsley and flour.
-Then, saute the halibut with a little olive oil, and finish it in a 350 degree oven for 10 minutes.
-Now, season the langostino or shrimp just like the fish and sear for a few minutes.
To Plate the Dish:
First, place the fingerling potatoes first. Then, add the roasted kale and top it with the halibut. You can add the langostino on the side with a little more kale. At the restaurant, they garnish with a lemon butter sauce and toasted bread crumbs.
Serving Suggestion: Chardonnay
