Bite with Belkys: Prime New York steak with a potato and bacon cake

Entertaining family and friends with a great dish always leaves a great impression, and tonight, we're making one you won't want to miss. Time to grab a Bite with Belkys.

The Chef: Alfred Portale
The Restaurant: Gotham Steak inside the Fontainebleau Resort, Miami Beach
The Dish: Prime New York steak with a potato and bacon cake.

Ingredients for New York Steak:

4 14 oz. prime New York steak
1 Tbs. of olive oil
ground black pepper, to taste
sea salt, to taste

Method of Preparation:

-First, brush on some oil on both sides of the steak.

-Then, season with black pepper and sea salt.

-Grill the steak for a few minutes on each side. Chef Alfred says to make sure you only flip in once while on the grill and to let it sit a little before serving.

Ingredients for Potato and Bacon Cake:

5 baking potatoes, such as russets (peeled and cut into 1-inch dice)
3 oz. of smoked slab bacon (cut into 1/4 dice)
1 Tbs. of vegetable oil
1/4 cup of shallots, finely cut
2 Tbs. of chives, minced
1 tsp. of garlic, minced
8 Tbs. of unsalted butter
sea salt, to taste
ground black pepper, to taste

Method of Preparation:

-Start by cooking the potatoes halfway for about 10 minutes in boiling water. Then, drain and transfer to a large bowl.

-Meanwhile, add a drizzle of oil to a hot saute pan and cook the bacon over medium heat for about five minutes or until lightly browned. Place the bacon on a paper towel to drain out any excess oil.

-Next, combine the potatoes with bacon, shallots, chives, garlic, four tablespoons of butter and season with salt and pepper.

-Now, transfer the mix to a non-stick pan and spread it evenly, pressing down on the potatoes to compress the cake.

-Then, dot the remaining four tablespoons of butter around the rim of the pan. Cook over the stove on medium heat until it begins to sizzle around the edges for about 10 minutes. Let it finish baking in the oven for about 40 minutes or until golden brown.

-Lastly, hold a serving platter over the skillet and invert them together to unmold the potatoes onto the platter.

-At the restaurant, Chef Alfred likes to top the potato cake with an infused oil. It contains minced garlic, shallots, chopped parsley and extra virgin olive oil.

To Plate the Dish:

Begin by slicing the steak and layering it on the plate. Then, add a piece of potato cake and garnish with mixed herbs.

Serving Suggestion: Cabernet Sauvignon
