Bite with Belkys: Chicken Marsala with string beans

Cooking at home brings friends and family together. We're gonna turn chicken and beans into something special. Time to grab a Bite with Belkys.

The Chef: John Preal
The Restaurant: Miami Prime Grill
The Dish: Chicken Marsala with string beans

Ingredients for Chicken Marsala:

2 chicken breasts
1 cup of all purpose flour
2 Tbs. of olive oil
1/2 cup of mushrooms, sliced
1 1/2 Tbs. of sun-dried tomatoes
2 Tbs. of Marsala wine
2 cups of Marsala sauce
10 oz. Fettuccine pasta

Method of Preparation:

-Begin by coating the chicken breast in flour. Then, sauté in a little olive oil until it's a nice golden brown.

-Next, add mushrooms. Chef John says you can use portobello or wild mushrooms.

-Toss in some sun-dried tomato, Marsala wine and Marsala sauce.

-Now, boil the pasta in salted water, drain and combine it with the chicken.

Ingredients for String Beans:

2 Tbs. of olive oil
2 Tbs. of garlic, minced
4 Tbs. of soy sauce
2 Tbs. of sweet chili sauce
1 lb. of string beans

Method of Preparation:

-Start by pouring a dab of olive oil in a hot pan. Then, add garlic, soy sauce, sweet chili sauce and let it reduce.

-In the meantime, blanch the string beans in boiling water.

-Lastly, mix the string beans with the sauce.

Ingredients for Marsala Sauce:

1/4 Tbs. of butter
2 Tbs. of onion, chopped
1/4 cup of all purpose flour
2 qt. of water
2 cups of beef stock
1/2 cup of Marsala wine
1 tsp. of salt
1 tsp. of pepper
2 Tbs. of demi-glaze

Method of Preparation:

-First, sauté chopped onions in melted butter. Then, add flour, water, beef stock and Marsala wine. Let the mixture reduce in low heat.

-Now, season the sauce with a little salt, pepper and demi-glaze.

To Plate the Dish:

Start with the pasta and top it with the chicken. You can garnish with green onions and a sprig of basil. Serve the string beans on the side with extra sauce over the top.

Serving Suggestion: Pinot Grigio
