Bite with Belkys: Apple Pie a la Mode

Put down your apron and get out a lab coat. A South Florida chef's recipe sounds more like a chemistry experiment than a dessert. Time to Grab a Bite with Belkys.

The Dish: Apple Pie a La Mode

Ingredients for granola mix:

1 Tbs. of butter, melted
1 tsp. of sugar
4 Tbs. of granola, crushed

Method of Preparation:

-Start by melting some butter in a hot pan.

-Then, add sugar and granola. Mix it together and transfer it to a baking pan.

-Let the granola mix bake in a 300 degree oven for about 15 minutes.

Ingredients for dessert filling:

1/4 cup of apple pie filling
1/4 cup of water
1 Tsp. of butter, melted

Method of Preparation:

-In a blender, add apple pie filling, water and melted butter. Let this blend together. Chef Gabriel says it is best to heat up the filling for a few minutes and serve it warm.

Ingredients for special topping:

1 Tbs. of Nutella
4 Tbs. of tapioca maltodextrin
1/2 cup of vanilla Dippin' Dots ice cream

Method of Preparation:

-At the restaurant, they combine Nutella with tapioca maltodextrin in a mixer. This changes the hazelnut spread into powdered form. Chef Gabriel says you purchase the chemical on-line or simply use Nutella as it is.

To Plate the Dish:

Start with the warm apple pie filling. Then, add the granola mix, Dippin' Dots ice cream and a sprinkle of the powdered Nutella. You can garnish with a berry coulis and a sprig of mint.
