Sometimes you just want Mexican food but it doesn't mean you have to go out. So today, we continue our month-long series of top dishes from the best chain restaurants in town. It's time to grab a Bite with Belkys.

The Dish: Ancho-chile marinated steak with spicy corn salsa

Ingredients for spicy corn salsa:

6 ears of yellow sweet corn
2 Poblano chilies
1/2 red onion, chopped
2 jalapeno peppers
1/3 cup of fresh cilantro, chopped
1 Tbs. of lime juice
salt and pepper, to taste

Method of Preparation:

-First, roast the corn and Poblano chilies on a grill. Then, cut the corn off the cob and place it in a bowl. Next, dice chilies, red onion and jalapeno peppers. Chef Rebecca recommends removing the membrane and the seeds from the jalapenos.

-Combine all the ingredients in a large bowl and add lime juice, cilantro and a sprinkle of salt and pepper.

-Stir it all together and set it to the side.

Ingredients for ancho chile marinated steak:

1 pkg (2 oz.) of dried ancho chilies
1 tsp. of black pepper
2 tsp. of cumin
2 Tbs. of fresh oregano, chopped
6 garlic cloves
1/2 red onion, quartered
1/4 cup of vegetable oil
4 fillets of rib eye steak

Method of Preparation:

-Start by making the marinade. You will need to soak the dried ancho chilies in water overnight or use canned, hydrated chipotle chilies instead. In a blender, add the chilies, black pepper, cumin, oregano, garlic, red onion, vegetable oil and blend until smooth.

-Then, use the marinade to coat the steaks. Wrap the meat in Saran wrap and let it sit in the fridge overnight.

-Next, grill the steaks for about four minutes on each side and season with a dash of salt.

To Plate the Dish:

-Start with the ancho chile marinated steak. Then, add the spicy corn salsa on the side. At the restaurant, they also serve this dish with their cilantro lime rice and garnish with a sprig of mint.

Serving Suggestion: Sweet Tea
