Bite with Belkys: Linguine with tuna and arugula
Just in time for dinner, a South Florida chef shares his recipe for a perfect pasta dish. Time to grab a Bite with Belkys.

The Dish: Linguine with Tuna & Arugula
1 lb. of linguine
6 oz. of Ahi tuna, sushi grade
2 Tbs. of extra virgin olive oil
1 garlic clove
1 lb. of arugula
1/4 cup of white wine
salt, to taste
crushed red pepper, to taste
1/4 cup of vegetable stock
1 tsp. of butter
Method of Preparation:
-Start with the pasta. Cook the linguine in a pot of boiling salted water. Then drain and set it to the side.
-Next, Grill the Ahi tuna medium rare on both sides and slice it into small pieces.
-Now, pour a dab of extra virgin olive oil in a hot pan and saute garlic for a few minutes. Once the garlic browns, remove it from the oil and toss in the arugula.
-Then add a shot of white wine, lower the flame and let it simmer until it evaporates.
-Add the tuna, a touch of salt, red pepper, vegetable stock, cooked linguine and butter. Mix this all together, saute for one minute over high heat and serve immediately.
Serving Suggestion: Pinot Grigio
