Its time to fire up the grill. A South Florida chef shows us how to put a twist on your favorite burger. Time to grab a Bite with Belkys.
The Chef: Ilde Ferrer
The Restaurant: 8 oz. Burger Bar
The Dish: 8 oz. burger with roasted garlic aioli and fried caper tarter sauce
Ingredients for Roasted Garlic Aioli:
2 egg yolks
15 garlic slices
1 Tbs. of Dijon mustard
2 cups of blended oil
Salt and pepper, to taste
Method of Preparation:
-Begin by mixing egg yolks, garlic, Dijon mustard and a little ice water in a blender.
-Then, while all the ingredients are mixing, slowly pour in a blended oil. Chef Ilde likes to use a 75 percent olive oil and 25 percent canola oil combination.
-Lastly, season the aioli with a pinch of salt and pepper and whisk it all together.
Serves: 10 sandwiches
Ingredients for Fried Caper Tarter Sauce:
1/2 cup of Mayonnaise
1/2 cup of roasted garlic aioli
2 Tbs. of Horseradish
1 Tbs. of shallots, chopped
1/4 cup of cornichons, chopped
1/2 cup of capers, fried and chopped
2 Tbs. of dill, chopped
2 lemons, juiced
4 Tbs. of fresh parsley, chopped
3 Tbs. of caper brine
Salt and pepper, to taste
Method of Preparation:
-In a bowl, add Mayonnaise, roasted garlic aioli, horseradish, shallots, cornichons, fried capers, dill, lemon juice and chopped parsley. Mix this all together.
-Then, pour in a dash of caper brine and season with salt and pepper.
Serves: 10 sandwiches
Ingredients for 8 oz. Burger:
8 oz. ground chuck burger patties
salt and pepper, to taste
1 Brioche burger bun
1 slice of white cheddar cheese
1 cup of iceberg lettuce, shredded
1 small Spanish onion, sliced thin
1 dill pickle, sliced thin
1 large heirloom tomato, sliced 1/4-inch thick
Method of Preparation:
-Start by seasoning the meat with salt and pepper on both sides.
-Then, grill over medium heat for a few minutes on each side and place a slice of white cheddar cheese over the top. At the same time, you can also toast the buns.
Serves: 1
To Plate the Dish:
Chef Ilde starts by adding a squeeze of his special mixture to the bottom bun. It's a combination of ketchup, mustard and mayonnaise. Then, add lettuce, onions, pickles and tomatoes. Finish it of with the 8 oz. burger and skewer it, so it all stays in place.
Serving Suggestion: Nice cold beer
