Bite with Belkys: Nutty Grilled Chicken Salad
Sometimes you just have to have that special craving, and if it's an Asian-inspired dish, we're preparing the perfect lunch combo. Time to grab a Bite with Belkys.

The Dish: Nutty Grilled Chicken Salad
Ingredients for Nutty Grilled Chicken Salad:
1/4 cup of Ramen Noodles, fried
1 cup of soybean oil
1 1/2 Tbs. of cashew nuts
1 1/2 Tbs. of macadamia nuts
1 Tbs. of complete seasoning (Chef Vita suggests Mrs. Dash)
1 Tbs. of sesame oil
1 chicken breast, boneless and without skin
3 Tbs. of soy grilling marinade
4 oz. of spring mix salad
2 Tbs. of carrots, julienne
3 Tbs. of edamame, lightly steamed
1/4 cup of mandarin oranges
3 Tbs. of rice wine vinaigrette
1/2 of an avocado (about 8 slices)
Method of Preparation for Nutty Grilled Chicken Salad:
-Start with the Ramen Noodles. Cut them into bite-sized pieces and deep fry in a pot of soybean oil until they are a nice golden brown. Chef Vito says, you can also buy the noodles already made at an Asian specialty market or in the ethnic aisle of your local supermarket.
-Then prepare a nut mix. In a food processor, add cashews, macadamia nuts, complete seasoning and sesame oil. Pulse a couple of times.
-Next, butterfly and grill a chicken breast. When it is almost ready, coat the chicken in a soy grilling marinade and let it cook a few more minutes and julienne.
-Lastly, assemble the salad. In a large bowl of spring mix salad add carrots, the nut mixture, edamame, mandarin oranges, Ramen Noodles and a drizzle of rice wine vinaigrette. Toss all these ingredients together.
To Plate the Dish:
Begin with the salad mix. Then add more noodles, nuts, mandarin oranges and edamame around the edges. Top the salad with sliced chicken and place avocado slices in between each piece of chicken.
