If you love eating out and trying new food, this is your month. Top restaurants are offering summer specials during Miami Spice, and tonight, we're learning how to make a chef's bestseller. Time to grab a Bite with Belkys.

The Dish: Salmon with champagne mustard sauce

Ingredients for salmon with champagne mustard sauce:

4 (6 oz.) salmon fillets
salt and pepper, to taste
1 cup of extra virgin olive oil
1 garlic clove, minced
1/2 Tbs. of shallots, minced
20 basil leaves, minced
1/2 Tbs. of herbs de provence
2 Tbs. of orange and lemon juice combined together
1 cup of champagne
1 cup of all purpose flour
1/2 Tbs. of Dijon mustard
2 Tbs. of heavy whipping cream

Method of Preparation:

-Start by seasoning the salmon with salt and pepper. Then sear in a hot pan with a little extra virgin olive oil. Chef Nino recommends about two minutes on each side.

-Next, prepare the sauce. Sauté shallots with a sprinkle of herbs de provence, basil, garlic, a combination of orange and lemon juice and champagne. Let the sauce reduce.

-Now, coat one side of the fish with flour and place it in the sauce.

-Then, add a dab of Dijon mustard and heavy whipping cream. Make sure to turn the salmon over, so it cooks some more on the other side.

To Plate the Dish:

At the restaurant, they garnish this fish dish with a tomato rose and fresh tarragon.

Serving Suggestion: Champagne
