Bite with Belkys: Papa Tave Pizza

The chef: Irma Joseph of Papa Tave Pizza in Southwest Miami-Dade. The restaurant is a local favorite and kids always leave their art work for display.

Irma Joseph : "If you want to bring a party here, that's the place. You just call here, they'll accommodate you."

The dish: Their very own Papa Tave pizza.

Irma Joseph: "With pizza, the sky is the limit. It's whatever people want."

Begin by chopping button mushrooms and mincing a few garlic cloves. Then, add the garlic to a bowl of extra virgin olive oil with some melted butter and dried oregano. Stir this together and set it to the side. Now, when it comes to the dough.

Irma Joseph: "You can make it on a bagel. You can make it on ciabatta or you make your own dough, and if you want to buy the dough, they'll sell it to you here."

Coat the dough in olive oil and use the palm of your hand to flatten it out, make sure to remove any air bubbles. Then, chef Irma calls in for a little help from chef Jesus Batista. He sprinkles a little flour over both sides of the dough and then he tosses. Next, lightly add flour on a pizza peel or flat baking sheet and set the dough. Then, add the olive oil and garlic sauce, mushrooms, and shredded mozzarella.

Now, bake the pizza for ten to 15 minutes or until the cheese is a nice golden brown. Lastly, add some sun-dried tomato.

Irma Joseph: "We don't want it to toughen up or dry out that's why we wait until we are ready to serve it."

And slice it up. Chef Irma suggests this pizza with a glass of sweet tea.

Irma Joseph: "Here's the Papa Tave pizza, that's the signature pizza, enjoy."

And at the restaurant, your meal wouldn't be complete without a Sweet Things cupcake.

You can also add a little spinach and bell peppers to this recipe.
