Bite with Belkys: Marie-Anne steak with double baked potato

Our month-long series on restaurants inside of South Florida's hotels wraps up tonight. We're going to the heart of Miami Beach. The chef prepares his best seller. Time to grab a Bite with Belkys.

The Chef: Patrick Lapaire
The Restaurant: Shula's Steak House (inside the Alexander Hotel)
The Dish: Marie-Anne Steak with Double Baked Potato

Ingredients for Marie-Anne Steak:

2 5 oz. black Angus fillet
2 Tbs. of extra virgin olive oil
1.5 oz. of green peppercorns, drained
1/3 cup of sugar
1/3 cup of Dijon mustard
1.5 cups of demi-glaze
1 tsp. of cognac
1 cup of heavy cream
1/2 tsp. of salt, pepper and paprika (or steak seasoning)

Method of Preparation:

-Start by making a green peppercorn sauce. In a hot pan with extra virgin olive oil add peppercorns, sugar and Dijon mustard. Chef Patrick likes to slightly smash the peppercorns for extra flavor.

-Then, pour in hot demi-glaze, a dash of cognac and heavy cream. Let this reduce for about five to 10 minutes.

-Now, season the steak and give it nice grill marks.

-Finish cooking the meat in the oven.

Ingredients for Double Baked Potato:

1 1/2 cup of mashed potatoes
2 Tbs. of green onion, chopped
1/4 cup of white cheddar cheese, grated
1 baked potato
vegetable oil (for deep frying)

Method of Preparation:

-Begin by mixing mashed potatoes with green onions and white cheddar cheese.

-Next, cut a baked potato in half, scoop out the inside and deep fry until it's a nice golden brown.

-Then, fill the fried potato with the mashed potato mix. Let it bake for 20 minutes in a 350 degree oven.

-Lastly, top the potato with white cheddar cheese and bake it for one more minute.

To Plate:

Pour a little peppercorn sauce over the steaks and garnish with fresh watercress.

Serves: 1

Serving Suggestion: Red Wine
