Bite with Belkys: Pork chop with apples and sweet potato

French cooking is some of the best around, and one chef is whipping up delicious French cuisine in our own backyard. Time to grab a Bit with Belkys.

The Chef: Didier Lailheugue
The Restaurant: Au Pied de Cochon
The Dish: Pork chop with apples and sweet potato

Ingredients:

2 (8-10 oz.) pork chops
1 sweet potato
1 green apple
4 Tbs. of butter
salt and pepper, to taste
1 Tbs. of fresh parsley, chopped
2 Tbs. of honey
1 cup of red wine vinegar
2 cups of beef gravy

Method of Preparation:

-Start by cooking chopped sweet potato in boiling water.

-In the meantime, pan fry sliced green apple with a dab of butter.

-Then, combine the sweet potato with the green apple and add a little more butter and a sprinkle of salt and pepper. Let it sear a few more minutes and top it with fresh parsley.

-Now, move on to the pork chops. Season them with salt and pepper on both sides.

-Next, melt a tablespoon of butter in a hot pan and cook the pork chops.

-Lastly, prepare a sweet and sour sauce. First, pour a little honey in a pan and wait until it sizzles.

-Then, add red wine vinegar and let it reduce for a couple of minutes.

-After, add some beef gravy and and cook for four more minutes.

-Finally, drain the sauce.

To Plate:

Place the sweet potatoes and apples off the center of a plate and set the pork chop on the side. Drizzle the sauce all around and serve.

Serves: 2
