Bite with Belkys: Corn fritters with smoked salmon

Caterers know best when it comes to presenting party dishes. One of them is showing us how to make her top selling appetizer. Time to grab a Bite with Belkys.

The Dish: Corn fritters with smoked salmon

Ingredients for corn fritters:

1 egg yolk
1 egg
8 Tbs. of all purpose flour
6 Tbs. of whole milk
1 tsp. of salt
1 tsp. of pepper
2 Tbs. of cool melted butter
1 cup of corn kernels
1 lb. of smoked salmon, sliced
8 oz. of sour cream
1 pinch of salt
1 pinch of pepper
3 Tbs. of fresh dill, chopped
zest of 1 lemon

Method of Preparation:

-Begin by making a corn batter. In a bowl, add one egg yolk, one whole egg, all purpose flour, milk a pinch of salt and pepper and whisk it together.

-Then, once the batter starts forming, add cool melted butter and fold in corn kernels.

-Next, take one tablespoon of the corn fritter mix and cook it in a hot pan with extra virgin olive oil. Let the fritters fry on both sides until they are a nice golden brown, and make sure to let them drain over paper towels.

-Now, cut some slices of smoked salmon in half and roll them up.

-Lastly, combine sour cream with salt, pepper, fresh dill and lemon zest.

To Plate:

Simply add a dab of the dill cream over the corn fritters and top it off with the smoked salmon. You can garnish with a sprig of fresh dill.

Serves: 8 people

Serving Suggestion: Chardonnay
