Bite with Belkys: Sesame noodles with pan seared tuna

The Restaurant: Atchana's East/West Kitchen (The Mutiny Hotel)
The Dish: Sesame noodles with pan seared tuna

Ingredients for sesame noodles:

1 lb linguine, cooked
1/4 cup of soy sauce
2 Tbs. of balsamic vinegar
1/4 cup of sesame oil
2 Tbs. of fresh ginger, grated
4 scallions, chopped
1/2 cup of fresh cilantro, chopped
2 garlic cloves, minced
salt and pepper, to taste
1 cup of bell peppers, julianned
1 cup of carrots, julianned

Method of Preparation:

-In a large bowl, add cooked linguine, soy sauce, balsamic vinegar, sesame oil and toss.

-Then, add grated ginger, chopped scallion, cilantro, garlic and a pinch of salt and pepper.

-Chef Siri also likes to toss in a combination of julianned bell peppers for color.

-Lastly, add sliced carrots and mix it all together.

Ingredients for dipping sauce:

1/4 cup of soy sauce
1/4 cup of rice vinegar
1 1/2 tsp of sesame oil
2 tsp. of sugar
salt and pepper, to taste
1 medium scallion, sliced thin
2 tsp. of fresh ginger
1/4 cup of water

Method of Preparation:

-Combine soy sauce, rice vinegar, sesame oil, sugar and stir.

-Next, add a little salt and pepper, minced scallion, ginger and some water. Stir again and make sure all the sugar is dissolved.

Ingredients for pan seared tuna:

4 fresh wild caught tuna steaks
salt and pepper, to taste
black and white sesame seeds, to taste

Method of Preparation:

-Begin by seasoning the tuna with salt and pepper.

-Then, sprinkle sesame seeds over the top and grill.

To Plate:

Serve the tuna in thin slices and garnish with orange wedges and flowers. Then, place the sesame noodles in a separate plate and decorate it with sliced carrots.

Serving Suggestion: Sauvignon Blanc

Serves: 4-6
