Bite with Belkys: Chicken Chili

Eating healthy does not have to mean boring foods. To prove it, a South Florida chef prepares a meal the whole family will enjoy. Time to grab a Bite with Belkys.

The Dish: Chicken Chili

Ingredients:

2 red bell peppers, cored, seeded, and large diced
1 red chili pepper
1 green chili pepper
4 cups of yellow onion, chopped
2 tomatoes, diced
1/4 cup of garlic, minced
salt, to taste
pepper, to taste
1/4 tsp. of crushed red chili pepper
2 cups of pinto/red beans, canned and rinsed
4 split chicken breast, bone in, skin on

Method of Preparation:

-Start by chopping red bell peppers, red chili pepper and green chili pepper. Then, add the peppers to a pot of boiling water.

-Next, add onion, tomato, garlic, salt, pepper, crushed red chili pepper and red beans. Chef Adrianne says you can also use garbanzo beans or navy beans instead.

-Lastly, add the bone in chicken breast and let it cook covered for about 30 minutes (stir occasionally). Before serving, flake the chicken off the bone.

To Plate:

Serve the chicken chili and garnish with fresh basil, thyme, sour cream, grated cheddar cheese and corn chips.
