Bite with Belkys: Popovers From Mariposa at Neiman Marcus

While popovers are popular in England, they've also become a staple at a South Florida store. Tonight, we learn the basics of baking these delicious treats. Time to grab A Bite With Belkys.

The Restaurant: Mariposa at Neiman Marcus

The Dish: Popovers

Ingredients:

  • 6 large eggs, at room temperature
  • 3 1/2 cups of milk
  • 4 cups all purpose flour
  • 1 1/2 teaspoons salt
  • 1 teaspoon baking powder

Method of Preparation:

1. Preheat oven to 350F

2. Microwave the milk on high for 2 minutes, or until warm to touch.

3. Beat the eggs at medium speed for about 3 minutes, until foamy and pale in color. Slowly stir in the milk at low speed. Beat again for 2 minutes on medium speed. Let the batter rest for 1 hour at room temperature.

4. Add the flour, baking powder, and salt.

5. Spray the popover tin heavily with non-stick spray. Fill cups almost to the top with batter. Place popover tin on cookie sheet.

6. Bake 15 minutes at 450F. Reduce heat to 375F and bake for 30-35 minutes more. Popovers should be a deep golden brown on the outside and airy on the inside. Serve hot with strawberry butter.

Strawberry Butter Ingredients:

  • 1 pound unsalted butter, softened
  • 1 1/4 cups strawberry preserves

Method of Preparation:

1. Beat the butter until light and fluffy.

2. Add strawberry preserves and beat until well combined.


To serve, spoon or pipe into one-ounce ramekins or bread and butter plates.
