Bite with Belkys: Garlic Miso Chicken from the Bond Street Lounge

Everybody's always looking for something simple and savory in the kitchen. But tonight, we're experimenting with an exotic japanese chicken dish, time to Grab A Bite With Belkys.
The Chef: Hiro Asano
The Restaurant: Bond Street Lounge at Townhouse Hotel
The Dish: Garlic Miso Chicken
Ingredients:
- 1 pc. wite breast chicken
- 1/2 cup miso
- 2/3 cup garlic puree
- 1/8 cup mirin
- 1/8 cup soy sauce
- 1/8 cup sugar
- 1 red pepper
- 1 yellow bell pepper
- 6 asparagus
- 2 shitake mushrooms
- 2 tsp. raspberry puree
Directions:
- Marinade chicken in soy sauce, sugar, mirin, garlic puree and miso for at least an hour or overnight.
- Remove excess sauce, then grill the chicken on a saute pan or in the oven.
- Meanwhile, cut red and yellow pepper into thin slices, then steam or boil peppers, asparagus or mushrooms until a dente.
- Remove chicken from grill and slice it at an angle.
- To plate the dish start with some raspberry puree, the veggies, the chicken and a pat of garlic butter.
Serves 1-2
