Bite with Belkys: Chicken Corn Soup from Fumanchu Chinese Restaurant

It was a Miami Beach landmark for more then 70 years. But last month, Fumanchu Chinese Restaurant finally closed its doors. Now the owners have given us one last recipe. Time to Grab A Bite With Belkys.

The Restaurant: Fumanchu Chinese Restaurant, Miami Beach

The Dish: Chicken Corn Soup

Ingredients:

  • 1/2 cup chicken, diced
  • 3 pints water
  • 1 can cream corn
  • 1 egg
  • 1 oz. Salt
  • 3 tbsp. Sugar
  • 1/2 cup water and cornstarch mix
  • Scallions for garnish

Method of Preparation:

-Start by dicing chicken breast into very small pieces and set it to the side.

-Next, heat water in a wok or large pot.

-When boiling, stir in chicken and whisk constantly for a minute.

-Add can of cream corn, salt, sugar, water and cornstarch mix and stir this altogether.

-Crack egg into soup and stir.

To Plate:

- Pour soup into bowl.

- Garnish with scallions.

Serves 4.

Serving Suggestion: Hot tea
