Bite with Belkys: Tropical Passion Ice Cream from Little Palm Island Resort & Spa
Our month long series of romantic eats and treats continues tonight in the Florida Keys. Move over Margaritaville, we're visiting a private paradise, where the chef is making a dessert that will satisfy any sweet tooth. Time to grab A Bite With Belkys.

The Dish: Tropical Passion Ice Cream
The Restaurant: Little Palm Island Resort & Spa
- Passion Fruit
- Golden Raisins
- Juice of Florida Orange
- Brown Sugar
- Ice Cream
- Melted Chocolate
- Mint Leaves
Method of Preparation:
-Start by cutting a passion fruit in half. Then, put the pulp into a bowl, and set it to the side.
-Now, remove the skin of a pineapple, cut it in slices and core it. Place the slices into a greased sauté pan over a hot stove. Cook the pineapple until it turns golden brown.
-Add some golden raisins and rum. Be careful with the rum because it may flame up. Next, add the juice of one orange, brown sugar and, finally, the passion fruit.
To Plate the Dish:
First, place the pineapple slices on a plate. Add the sauce from the pan, a scoop of your favorite ice cream and top it off with melted chocolate.
You can garnish it with some mint leaves.
Serving Suggestion: A sweet dessert Wine
