Bite with Belkys: Organic Annatto Chicken with Garlic Mashed Green Plantains from Hot Tin Roof

The Dish: Organic Annatto Chicken with Garlic Mashed Green Plantains

The Restaurant: Hot Tin Roof at the Ocean Key Resort and Spa in Key West

Ingredients for Sour Orange Sofrito:

  • 1 Red Pepper
  • 1 Green Pepper
  • Juice of a Sour Orange
  • 1 tbsp. Garlic
  • 2 tbsp. Cilantro
  • Annatto Oil
  • Organic Chicken Breast
  • 1/2 cup of Olive Oil

Method of Preparation:

-Begin by chopping a red and green pepper into small pieces. Place them in a bowl, and set it to the side.

-Next, squirt the juice of a sour orange.

-Add garlic and cilantro and mix everything together.

-Lastly, pour some annatto oil.

-Now marinate the chicken breast and let it sit in the refrigerator overnight.

-The next day, season it with salt and pepper.

-In a hot sauté pan add some olive oil and then sear the chicken.

-Once it turns golden brown place it in a 375-degree oven for eight to ten minutes.

Ingredients for the Sauce:

  • Sherry Wine
  • White Wine
  • Orange juice
  • Demi Glace or Beef Stock

Method of Preparation:

-First, slowly pour Sherry Wine into a sauté pan over the stove, be careful because it may flame up.

-Then add white wine, fresh orange juice and leftovers from the sofrito and demi glace or beef stock.

-Stir everything together and put it to the side.

Ingredients for the Mashed Green Plantains:

  • Green Plantains
  • Onion Oil
  • Scallions
  • Bacon
  • Chicken Stock
  • Salt

Method of Preparation:

-Start by chopping green plantains and then deep-fry them.

-Put the plantains into a bowl. Pour onion oil, scallions, bacon, warm chicken stock and mash it all together.

-Lastly, add a pinch of salt.

To Plate the Dish:

Place a banana leaf on a plate. Then, in a separate bowl, put the mashed plantains and press it down. Remove the bowl over the plate to get a nice round shape. Cut the chicken breast in half and place in on top. Add some left-over sofrito on the side. Top it off with the sauce.

Serving Suggestion: Chardonnay
