Bite with Belkys: Beer Can Chicken from Ireland's Steak House

A South Florida chef is sharing his secret for a great tasting chicken -- it requires a can of your favorite beer. Time to grab A Bite With Belkys.

The Chef: Bob Axenfeld

The Dish: Beer Can Chicken

The Restaurant: Ireland's Steak House in the Hyatt Regency

Ingredients:

  • 3 1/2 - 4 lbs. Chicken
  • 1 tbsp of Poultry Seasoning
  • Salt
  • Black Pepper
  • 1 tbsp of Garlic Powder
  • 1 can of Beer
  • 1/2 cup of White Vinegar
  • 1/2 cup of Apple Juice
  • 1 tbsp of Worcestershire Sauce
  • 1 tbsp of Lemon Juice

Method of Preparation:

-First, rinse and pat dry the chicken. Then, remove any fatty lumps in the cavity.

-Next, combine poultry seasoning with salt, black pepper and garlic powder and season the chicken inside and out.

-Now, pop the tab off a clean beer can. Then, poke about six to seven holes on the lid and add a spoon of the remaining seasoning over the top of the can. Make sure to do this in an ovenproof pan because it will get messy.

-Put the chicken over the beer can, so that it is standing upright. Then, place it in a 325-degree oven for about an hour and a half.

-Meanwhile, start making the sauce. Begin by mixing white vinegar, apple juice, Worcestershire sauce and lemon juice into a pot.

-Next, heat it over the stove for about five minutes. Use the sauce to baste the chicken about every 20 minutes.

-When the bird is ready, remove the beer can and slice the chicken up.

To Plate the Dish:

Plate the dish with your favorite rice. Chef Bob likes to garnish with some fresh watercress and sweet roasted peppers.

Serving Suggestion: A glass  of your favorite beer
