Bite with Belkys: Guinness Barbecue Shrimp

Summer is the perfect time for backyard barbecues. One South Florida chef is firing up the grill for a scrumptious shrimp dish. Time to grab a Bite with Belkys.

The Dish: Guinness Barbecue Shrimp with King Crab potato salad
The Restaurant: A Fish called Avalon
Ingredients for the Guinness beer marinade:
1 cup olive oil
12 oz. Guinness beer
3 tbs. of honey
2 jalapenos
1 tbs. of fresh chili powder
Salt (flavor to taste)
Method of Preparation:
-Place all the ingredients in a blender, and blend until smooth.
Ingredients for BBQ Shrimp:
12 jumbo shrimp (peeled)
1 shallot
2 minced garlic gloves
1 bunch of fresh cilantro
Guinness beer marinade
Salt (flavor to taste)
Method of Preparation:
-Start by placing the shrimp in a bowl. Chef Joe likes to leave the tail on for presentation, but you don't have to.
-Now add shallots, minced garlic, cilantro and the Guinness beer marinade. Then, mix it all together and add some salt. Let it refrigerate for about 20 minutes.
-Next, grill the shrimp for four to five minutes.
Ingredients for King Crab potato salad:
2 lbs. red potatoes quartered
3 tbs. minced garlic
1 red bell pepper, medium diced
1 lbs. king crab
1 shallot
Fresh basil
Fresh cilantro
1/2 cup of mayonnaise
1/2 cup of sour cream
Pinch of salt
1 tbs of spicy mustard
1/2 cup of white vinegar
Method of Preparation:
-First, put the potatoes in a pot of boiling water and add some salt.
-Now, in a bowl, add minced garlic, red peppers, king crab, shallots, fresh basil, mayonnaise, sour cream, salt, spicy mustard, hot potatoes and some white vinegar.
-Lastly, mix it together.
To Plate the Dish:
-Begin with a few scoops of King Crab Salad, and then serve the shrimp. Chef Joe likes to garnish with some chopped green onions and red peppers.
