Bite with Belkys: Grilled Skirt Steak In Lettuce Leaves

If you're looking for a hot new restaurant to try but can't afford to even look at the menu, we've got some good news for you. It's Miami Spice Time, the time of year when some of South Florida's best restaurants offer three-course meals up to half off, so let's grab a Bite with Belkys.

The Dish: Grilled Skirt Steak in Lettuce Leaves

Ingredients:

3 lbs. of skirt steak
1 cup of soy sauce
6 oz. of pineapple juice
The juice of 4 limes
1 small onion, halved and sliced

Method of Preparation:

-Start by making the marinade. Pour one cup of soy sauce into a large bowl. Then, add pineapple juice, lime juice and onions and whisk it together.

-Then, move on to the skirt steak. Chef Govind says you can also use hanger steak and flank steak if you prefer. Cut the steak into slices, and let it marinate in the fridge for at least half an hour.

-Next, place bamboo skewers in the steak, and grill it for about one minute and a half on each side.

Ingredients for the dipping sauce:

2 tbs. of grated ginger root
2 tbs. of brown sugar
1 tsp. of minced garlic
The juice of two limes
1/2 cup of rice wine vinegar
1/4 cup of soy sauce
1 bunch scallions, thinly sliced

Method of Preparation:

-Combine all the ingredients in a large bowl.

To Plate the Dish:

Begin with two lettuce leaves on a plate. Then, on each leaf, add some Thai basil, cilantro sprigs and a skirt steak skewer on top. Lastly, serve the dipping sauce on the side.
