The Dish: Green Pepper Steak with French fries
Ingredients:
2 tbs. of green peppercorn
3 tbs. of butter
1 1/2 pound of filet mignon
Black pepper, to taste
Salt, to taste
2 tbs. of cognac
3 tbs. of heavy whipping cream
Method of Preparation:
-Start by preparing the secret sauce. In a blender, mix green peppercorn and unsalted butter.
-Now, for filet mignon. First, remove the fat and the silver skin. Then, season it with salt and black pepper.
-Next, sear the steak in a greased pan for about three minutes on one side and four minutes on the other. Chef Claude says to add some oil over the steak if you like it well done. Set it to the side and deglaze the pan with cognac.
-Then, in the same pan, add heavy whipping cream, the green pepper butter mix and a pinch of salt. Toss the mixture around, so the butter does not break apart.
Ingredients for the French fries:
3 white potatoes
Large bowl of water
Vegetable oil
Method of Preparation:
-First, peel the potatoes, and put them in a bowl of water. Then, make sure to dry them well before you start to slice. Chef Claude says to cut the potatoes thin if you like crispy fries or a bit larger if you like them moist.
-Next, deep fry the potatoes and, once they are cooked, increase the heat and fry them again.
-Lastly, add some salt.
To Plate the Dish:
At the restaurant, Chef Claude starts with the fires. Then he places the filet mignon on the side and tops it off with the green pepper butter sauce.
