The Dish: Seared salmon with citrus butter sauce and a mango salsa

Ingredients for the Mango Salsa:

2 mangoes, diced
1 cucumber, diced
1 tomato, diced
1/2 jalapeno, diced
1 lime, juice and zest
1 tbs. mint, chopped
1 tbs. cilantro, chopped
1 tbs. rice wine vinegar
1 1/2 Tbs. sugar
Salt & Pepper, to taste
2 tbs. olive oil

Method of Preparation:

-Combine all the ingredients in a large bowl, and let the sauce sit in the fridge for as long as possible.

Ingredients for the Citrus Butter Sauce:

1 lemon, zest and juice
1 orange, zest and juice
1 lime, zest and juice
1 tbs. shallots, diced
1 tbs. minced garlic
5 black peppercorns
1 bay leaf
1/4 cup heavy whipping cream
1 lb. unsalted butter, cubed

Method of Preparation:

-First get the zest of a lemon, an orange and a lime. Then squeeze out the juices of all three.

-Next, add chopped shallots, minced garlic, peppercorns, and a bay leaf.

-Let the citrus mix reduce by half over the stove and then add heavy whipping cream and butter. Chef Michael says not to let the sauce boil, just slowly let the butter melt in.

-Lastly, strain the sauce, and keep it warm.

Ingredients for the Salmon:

4 6oz. salmon filets
Salt & Pepper, to taste
1 tbs. olive oil

Method of Preparation:

-Start by season both side of the salmon with salt and pepper.

-Then sear the fish in pan with olive oil for about two minutes on each side.

-Finish it in a 350 degree oven for four minutes.

To Plate the Dish:

At the restaurant, Chef Michael starts with a toasted almond, brown rice, and then the citrus sauce on the side. Place the salmon on top of the sauce, and cover it with some of the mango salsa. You can also add some fresh herbs and fried parsnip.

Serving Suggestion: Pinot Grigio
