Bite with Belkys: Shrimp Scampi

There's no better way to enjoy South Florida's fall weather than on a boat. We've got a couple of hot spots you might want to dock in. Seven's Belkys Nerey joins us now to explain.
The Chef: Norberto Valle
The Dish: Shrimp Scampi
Ingredients:
1 tomato
Vegetable oil
1/2 tsp. of minced garlic
Salt and pepper
5 jumbo shrimp, cleaned and peeled
1 tbs. of all purpose flour
1 splash of vodka
The juice of 1/2 a lemon
1/2 cup of clam juice
1 tsp. of butter
Fresh basil, chopped
2 tsp. of feta cheese, diced
2 tsp. of avocado, diced
Method of Preparation:
-Start by cutting a tomato into wedges. Then, in a hot pan, add vegetable oil, and sauté the tomatoes for two minutes.
-Next, add minced garlic, salt and pepper and set it to the side.
-Now, butterfly the shrimp, and flour to the center. Then warm up some vegetable oil in a hot pan and carefully place the shrimp sitting upwards.
-After about a minute, turn the shrimp over.
-Next, add garlic, the tomato mix, fresh basil, salt and pepper and a splash of vodka. Chef Norberto says you can also use white wine or brandy.
-Then, add some lemon juice, clam juice and butter. Make sure to let the butter melt into the sauce.
To Plate the Dish:
Chef Norberto starts with some chopped feta cheese and diced avocado on the side of the plate. Then the shrimp, the tomato mix, the sauce over the top. Lastly, add a cup of your favorite rice.
Serving Suggestion: Chardonnay
