Bite with Belkys: Roasted sweet potatoes
The holidays are over, but if you are still in the spirit, one local chef is showing us how to add a twist to a popular casserole dish. Time to grab a Bite With Belkys.
The Chef: Douglas Rodriguez
The Dish: Roasted sweet potatoes with pineapple and ham
2 lb. of medium-sized sweet potatoes
2 tbs. of butter
1 onion, chopped
1 can of chipotle pepper, use the sauce
1 cup of smoked ham, finely diced
1/2 cup of miniature marshmallows
1 cup of diced pineapple
Method of Preparation:
-Start with the sweet potato. First peel off all the skin, and then wrap it in aluminum foil.
-Next, bake the potatoes in a 350 degree oven for about 40 minutes. Once it's ready, cut it into dices and set it to the side in a bowl.
-Now melt butter in a hot pan and sauté chopped onions. Then add the secret ingredient, chipotle pepper. Chef Douglas says to only use the sauce. You can find chipotle pepper in a can at any local supermarket.
-Combine the onion mix with the sweet potatoes, and add mini marshmallows and diced pineapple. You can also try using mango instead.
-Mix it all together and put it in a baking dish. Chef Douglas likes to add some smoked ham over the top.
-Then let it bake one more time, for about 20 minutes or until the ham looks caramelized.
To Plate the Dish:
Scoop the roasted sweet potatoes onto a nice plate. Chef Douglas says you can pair this dish with some roasted pork or turkey.
