Sparking up the grill is common here in South Florida. Tonight a chef is giving us his all-time and secret recipe to the perfect skirt steak. Time to grab A Bite With Belkys.
The Chef: Buddy Bucciero
The Dish: Black Diamond with garlic mashed potatoes
Ingredients for Black Diamond:
3 lb. of skirt steak
2 cups of balsamic vinegar
1/4 cup of brown sugar
2 tsp. of blackening spice
1 tsp. of thyme
1 tsp. of basil
1/2 cup of Worcestershire sauce
1/2 cup of olive oil
Method of Preparation:
-Start with the steak. Cut off all the silver skin and then prepare the marinade.
-In a large bowl, combine balsamic vinegar, brown sugar, blackening spice, thyme, basil, Worcestershire sauce and olive oil. Whisk it together and add the meat.
-Cover the bowl and let it sit in the fridge for 12 hours.
-Next, spark up the grill. Chef Buddy says you can grill the steak for three, four or five minutes on each side.
Ingredients for Garlic Puree:
2 tbs. of olive oil
6 garlic gloves
1/2 tsp. of mustard
1/4 cup of heavy whipping cream
Method of Preparation:
-First, pour a drizzle of olive oil in a hot pan and then add garlic cloves.
-Let it roast in a 350 degree oven for 12 minutes or until it looks golden brown.
-Then mix the garlic in a blender with mustard and heavy whipping cream.
-Lastly, add a tablespoon of the garlic puree to your mashed potatoes and mix it together.
To Plate the Dish:
At the restaurant, Chef Buddy starts with the potatoes and then adds the skirt steak in bite-sized pieces. On the side, he places some mixed veggies and tops it off with fried onion rings. You can garnish this dish with chopped parsley.
