Bite with Belkys: Pepper Steak from Miss Yip

The Chinese New Year starts tomorrow and, in honor of this celebration, we've decided to make dishes with an Asian twist all month long. It's time to grab A Bite With Belkys.
The Chef: Vincent Cheng
The Dish: Pepper Steak
Ingredients:
1 1/4 lb. of New York strip steak
1/4 of a green pepper
1/4 of a red pepper
1/4 of a white onion
1 jalapeno pepper
1 tsp. of cornstarch
Salt and pepper, to taste
1/2 tsp. of sugar
2 tsp. of cooking wine
2 1/2 tbs. of vegetable oil
1 tsp. of chili sauce
2 tbs. of soy sauce
1/2 tsp. of white pepper
2 tbs. of heavy whipping cream
Method of Preparation:
-Start by preparing the veggies. Chop a green pepper, a red pepper, some onion and a jalapeno pepper, and set it to the side.
-Next, cut the steak into small cubes and put it in a large bowl. Chef Vincent likes to marinade the meat with cornstarch, salt and pepper, sugar and cooking wine. Mix it all together, and let it sit for about 20 minutes.
-At the restaurant they use a wok to cook the meat, but if you don't have one, you can use a sauté pan.
-Chef Vincent steams the wok with water, adds vegetable oil and cooks the steak for a few seconds. Once it's ready, drain out the oil from the meat, and set it to the side.
-Next, in a wok or hot pan add some minced garlic, chili sauce, the chopped veggies, salt and pepper, the cooked meat, a teaspoon of cooking wine, soy sauce, white pepper and a little bit of heavy whipping cream. Toss it all together and serve.
To Plate the Dish:
-At the restaurant, Chef Vincent first serves some yellow and white carrots with a sprinkle of cilantro. Then he places the steak on the side.
