Bite with Belkys: Sesame Seared Ahi Tuna
Mom-and-pop restaurants offer some of the best comfort foods. So, this month, we are stopping by these hidden hot spots to learn how make the chef's top dish. Belkys Nerey joins us with more.
The Chef: Corwin Guzman
The Restaurant: Gilbert's 17th Street Grill
The Dish: Sesame seared Ahi Tuna
5 oz. ahi tuna
white sesame seeds
1 tsp. of garlic, minced
1 tsp. of ginger
1 tsp. of brown sugar
0.5 oz. of soy sauce
3 oz. of vegetable oil
1 oz. of rice wine vinegar
2 Tbs. of peanut butter
1 cup of green cabbage, shredded
1 cup of red cabbage, shredded
Method of Preparation:
-Start by coating a tuna steak with sesame seeds. Then, sear the tuna for about two minutes in a 1 oz. of vegetable oil.
-Cut the tuna in slices and set it to the side.
-Next, prepare a peanut dressing. In a bowl, combine ginger, brown sugar, garlic, soy sauce, 2 oz. of vegetable oil, rice wine vinegar and peanut butter. Whisk it all together and then, toss in the cabbage.
First, serve the cabbage. Then, Chef Corwin likes to add a side of ginger and wasabi. Lastly, serve the tuna. You can garnish with teriyaki sauce and lemon.
