Ingredients for bacon wrapped dates (Serves 2):

5 oz. of linguica sausage, chopped

3 Tbs. of manchego cheese, grated

1 pinch of chives, thinly sliced

salt & pepper to taste

6 dates

3 slices of smoked bacon, 1/4 inch thick

canola oil to deep fry the dates

Method of Preparation:

-Start by making the filling. Combine the sausage with manchego cheese, chives and a little salt and pepper.

-Then, flatten out the dates, add a scoop of the sausage filling and wrap it with the bacon.

-Next, skewer the dates and bake in a 350 degree oven for about eight minutes.

-Finish the dates by deep frying them in canola oil. Chef Timon says you can also finish the dates in the oven if you prefer not to fry them.

Ingredients for Red Sangria (Serves 5-6):

1 bottle of cabernet sauvignon

1 cup of fresh orange

1 splash of mango juice

1 splash of sour mix

1 splash of pineapple juice

1/2 cup of creme de cassis

1 lemon

1 lime

1 orange

Method of Preparation:

-First, slice the fresh fruit and add it to a large pitcher with ice. Then, mix the red wine with orange juice, mango juice, sour mix, pineapple juice and creme de cassis.

To Plate:

Chef Timon adds a little mustard dressing to a plate salad and the dates.

Serving Suggestion: Red Sangria
